This gin aims to pay homage to traditional dry gins while incorporating local ingredients from the Texas Hill Country to create a distinctive flavor. It is distilled with nine botanicals, including juniper, coriander, and anise, along with lavender, grapefruit, and pecan, all vapor-infused during the distillation process to extract their purest essence. Finally, it is proofed down to 94 proof using limestone-filtered Texas spring water. The result is a bright, fresh, and well-structured gin, with floral and citrus notes on the nose, a hint of anise on the mid-palate, a robust juniper base, and a smooth finish with nuances of pecan and lavender.
